This is actually going to be a two for one. Exciting? Right? Pizza is a go-to of mine because, a pizza can literally be anything you want it to be. And that’s what makes cooking fun! And easy! Why wouldn’t you make what you like to eat?

There are a few things in this dish that I had not tried before and always wanted to try. It’s nothing super fancy and can be found at your local Wal-M*art. (don’t copy rite me??). All I’m saying is- If you see something that looks unfamiliar; embrace it! Let’s begin.

Ingredients

2 Packs of Flatbread

1.5 cup of Gardein Grounds

1 Large Onion

6 Tbsp Culinary CBD Oil

There are multiple ways to produce this type of hemp plant oil, but this I have found is the most effective for cooking

You’ll need:

  • 16 Oz Olive or Coconut Oil
  • 1.5 Cups CBD Flower, ground
  • A Crock Pot
  • Cheese Cloth or another fine strainer (I used a metal coffee filter)

Add oil and flower to your crock pot. Cook on low heat for 4-6 hours. Do not allow oil to surpass a temperature of 240 degrees. Once finished, strain the mixture carefully. Store in a cool, dry place.

1 Medium Size Eggplant

1 Pack of Field Roast Chao Cheese Creamy Original

1 Cup of Green Olives

4 Tbsp Balsamic Vinaigrette

1 Tbsp Herb De Provence

1 Tsp White Pepper

1 Tsp Garlic Powder

2 Tbsp Turbinado Sugar

1 Tbsp Poultry Seasoning

  • Preheat your oven to 400 degrees. Wash your Eggplant and cut off the stem and end pieces. Cut your eggplant into one quarter inch slices. Cut your slices into eighths and quarters depending on the size. You want chunks, but not too small. The eggplant will shrink as it cooks.

 

  • Drizzle the eggplant with two tablespoon of CBD oil, one tablespoon of Herb de Provence, one tsp of ground white pepper, and one tsp of garlic powder. Roast your eggplant for about 20 minutes, or until pleasantly browned. Set to the side.

 

  • Cut off the root and end of your onion. Slice your onion in half, and slice each half into thin half-moons. Sautee the onions over medium heat in 2 tablespoons CBD oil, 2 tablespoons of balsamic vinaigrette, and the turbine sugar. Cook until translucent; once finished, set to the side.

 

  • Heat the Gardein Grounds over low heat with 2 tablespoons of CBD oil and balsamic vinaigrette. Season with onion powder, and poultry seasoning. Cook for about 5-7 minutes and sit to the side.

    Slice the green olives in half the short way and set to the side.

 


  • Bake your flat-breads at 400 degrees bottom side up until golden brown. Brush your flat breads with olive oil and balsamic vinaigrette. This will act as your ‘sauce’.

 

  • Layer one flatbread with the cheese, onions, and Gardein Grounds. Layer the other with cheese, eggplant, green olives, and onions.

 

  • Bake at 400 degrees for a few minutes until cheese is melted, checking periodically.

 

  • Do not exceed 6 minutes, you don’t want it to over bake. However, if you enjoy a more crispy dough, allow to bake for up to 8 minutes.

 

  • Bake your flat-breads at 400 degrees bottom side up until golden brown. Brush your flat breads with olive oil and balsamic vinaigrette. This will act as your ‘sauce’.

 

  • Layer one flatbread with the cheese, onions, and Gardein Grounds. Layer the other with cheese, eggplant, green olives, and onions.

 

  • Bake at 400 degrees for a few minutes until cheese is melted, checking periodically.
